Pomegranate Mojitos

I love mojitos.  They remind me of summertime and I love that you can change just one or two ingredients and have a completely different drink! I decided to host a little happy hour for my coworkers and wanted to make a fun cocktail.  I love pomegranates and love the color that they add to the drink.  It also makes me feel like I'm drinking something healthy...aren't pomegranates anti-oxidants?  I threw in some lime slices, fresh mint and pomegranate arils (That's the fancy name for the seed - I just learned this yesterday...).  We had a wonderful evening and it was great to catch up out of the office.  If you make this at home for a crowd, I'd recommend mixing up the cocktail in a pitcher without the booze.  That way, your guests can still enjoy the fresh taste of summer even if they'd rather not partake in the alcohol.  I hope you make this refreshing cocktail and enjoy it with good friends.



Pomegranate Mojitos

Recipe (Serves 5)

1 liter club soda
20 ounces ginger ale
lime juice from one lime
3 cups pomegranate juice
2 limes, sliced
white rum to taste
5 fresh mint sprigs
handful of pomegranate arils (optional)

In pitcher, mix together club soda, ginger ale, lime juice, pomegranate juice and sliced limes.  Pour over ice cubes and add white rum if using.  Garnish with fresh mint sprigs and pomegranate arils.
